Candied Strawberries Made With Sugar or Stevia For a Healthy Treat

Summer is strawberry season.  However, this summer a grandson complained to me that the strawberries were not sweet.  Oprah must have agreed, as in her August 2016 Oprah Magazine she included a recipe for Candied Strawberries!


Oprah’s recipe uses sugar and is not a recipe that a grandma can do WITH grandchildren but can do FOR grandchildren.  The recipe calls for putting the strawberries on sticks, which is great for the grandchildren to hold.  But, it calls for leaving the green stems on the strawberries.  This, the grandchildren do not appreciate.  The recipe says it takes about 25 minutes and makes about 15 strawberries.



Ingredients:

1 pound strawberries, rinsed and dried (and cut off green stems for grandchildren)

2 cups sugar

1 cup water

1/4 cup corn syrup

parchment paper

cookie sheet

thin wooden skewers

candy thermometer


Directions:

  • Insert a skewer partway through each strawberry.

  • In a saucepan, stir together sugar, water and corn syrup.  Bring to a boil over medium high heat.  Stir a few times until sugar dissolves.  When the mixture reaches 300 degrees on the candy thermometer (about 15 minutes) remove the saucepan from the heat. Dip strawberries into mixture, now syrup, letting excess drip back in pan.  The recipe says to be careful not to be burned by the hot sugar which is why this is a recipe to do for grandchildren, not with them.  Put on parchment paper on cookie sheet. Enjoy when not hot.


This Grandma was surprised Oprah did not have a sugar substitute alternative to sugar, especially because the recipe she recommended in the magazine calls for so much sugar.  The internet is a wonderful thing, and on a website.


There was a Candied Strawberry recipe using the same one pound of strawberries with -Trulicious All Natural Sweetener to taste, natural stevia, a sugar substitute.


This recipe for candied strawberries grandma CAN make with grandchildren.


Ingredients

1 pound strawberries, rinsed and dried, and cut in half long ways (and cut off green stems for grandchildren)

Trulicious powdered stevia

parchment paper

cookie sheet


Directions

  • Preheat oven to 210 degrees.  Place strawberries on the parchment lined cookie sheet. Sprinkle with Trulicious powdered stevia.

  • Bake at 210 F for 3 hours.


The website considers one serving as 6-9 whole strawberries, which it counts as one serving of fruit.  There is no doubt that this second recipe will be more favored by the parents of our grandchildren.  There is also no doubt that after three hours of waiting, the grandchildren may forget that they are even interested in candied strawberries.  So, when parents are not around. . .
