Pandemic Pounds. That is what I call the extra weight I am carrying around due to a sweet tooth and being home all the time to overdo. Yes, we add bakery items to our Instacart Publix shopping list. As an aside, we may never go into a supermarket again as we are getting used to communicating by text with a shopper. Second, I cannot wait until we do not have to Lysol wipe every item before we put it away. But, with neighbors also baking and sending delicious sweets down to us in the elevator, the pandemic pounds will continue to pile up so I have given up any effort to control myself.
Yes, I am reading recipes on line like crazy, and this is from the grandma whose expertise is making reservations. I came upon a picture that I knew would be a grandchild hit, ice cream bread full of colored sprinkles. It would also make a wonderful pandemic birthday cake!
The recipe is so quick and easy. I am going pass it along to the parents of our grandchildren for them to get the ingredients, especially our grandchildren’s favorite ice cream, and let me zoom make it with the grandchildren.
The recipe requires your favorite ice cream, colored sprinkles, flour, sugar and vanilla, and if you don’t have vanilla, don’t worry about it. Flour is a rare product find too, so fortunately you do not need much.
Rainbow Sprinkles Ice Cream Bread
INGREDIENTS
2 cups ice cream, your favorite flavor, as long as it is full fat ice cream
1¼ cups self rising flour, must use self rising flour for the recipe to work
1 tsp vanilla extract
½ cup rainbow sprinkles
¼ cup granulated sugar
DIRECTIONS
Preheat oven to 350 degrees. Grease a loaf pan and line the bottom with parchment paper.
In a large mixing bowl, stir ice cream until just about melted. Stir in self rising flour. Mix until combined completely. Add the sugar and stir gently. Add vanilla and stir gently. Mix in ¼ cup of the sprinkles and stir gently.
Pour batter into prepared pan and spread evenly. Toss the remaining ¼ cup sprinkles all over top of batter.
Bake in preheated oven from 30 to 45 minutes (oven times may vary so check after 30 minutes) bread should bounces back when touched lightly and a toothpick comes out clean or with a few dry crumbs.
Let cool completely before cutting. Serves 8 large slices.
