It is dangerous to take grandchildren into Starbucks. These little balls of cake with frosting and sprinkles on a stick like a lollipop are a sweet target for them. At this link, read about how Starbucks teamed up with a company to supply their cake pops since 2010.
At nearly $2 (and 165 calories each), this Grandma went on a search for recipe to make cake pops at home. Of course, the recipe must be easy and fun.
Since cake pops scream creativity, it is a wonderful art as well as baking project with grandchildren. Cake pops are not only made with icing, but you add melted white candy as a coating, cover with sprinkles or can be creative and use melted chocolate or frosting and melted marshmallows or M & Ms and more. An overload of sweet!
Ingredients
Leftover cake or cookies or one box of yellow cake mix, plus required ingredients
1 cup vanilla frosting, plus more as needed
20 ounces white candy melting wafers
Sprinkles or cookie crumbles, or more for decorating
46 lollipop sticks (each about 6 inches long)
two 9.8-by-11.8-inch Styrofoam blocks
(both lollipop sticks and Styrofoam blocks available at Michaels)
Instructions:
1. In a 9″ x 13″ pan, bake the cake according to the instructions on the yellow cake mix box and let it cool. Skip this step if you’re using leftover cake or cookies.
2. Break the cooled or leftover cake or cookies in pieces and put in a food processor. Add the frosting and process for 30 seconds or until the mixture forms a ball and pulls away from the sides of the bowl. If the mixture doesn’t come together, add more frosting, 1 tablespoon at a time, until it holds its shape.
3. Scoop out the mixture with a spoon or a ¾-ounce scoop and run it between your hands to make 46 small balls out of the mixture. Put the balls on a baking sheet covered with parchment paper. Grandchildren will not only lick their fingers but lick the bowl!
4. Refrigerate until firm, about 30 minutes.
5. Meanwhile, melt the white candy in the microwave using a microwave-safe bowl following the instructions on the package.
6. Dip a half inch of the tip of a lollipop stick into the candy and then stick the tip halfway into a cake ball. Repeat with the remaining cake balls and sticks.
7. Refrigerate the cake pops until completely chilled, about 1 hour. This is enough time to play a game or two with the grandchildren.
8. Microwave the candy again until melted and pour it into a tall narrow glass. Dip each cake pop completely into the candy and let any excess run off. If decorating, turn the cake pop upright and sprinkle with sprinkles or other decoration while the coating is still wet. Stick the finished pops in two 9.8-by-11.8-inch Styrofoam blocks block and let set completely.
Cake pops are perfect for a grandchild’s birthday party or a special occasion or just a visit activity!
