Even President Biden says it is time to celebrate! This Fourth of July 2021 is most special as many of us have not enjoyed the company of family and friends for much too long.
Yes, we are all planning on barbeques, or those of us most fortunate have been invited to one where we do not have to cook or bake. Restaurants are so short handed, so we have to be patient to eat out. Even our favorite take out places are overwhelmed. And who wants to spend time in the kitchen for appetizers or dessert.
I came upon the best idea for a red, white, and blue dessert for this Fourth of July 2021 that will let us celebrate with the least effort. How about minutes’ worth! We can even volunteer to bring dessert.
It is the Food Network’s All American Mosaic Cake.
The most time consuming part will be going to the store to get the ingredients: a plain undecorated white-frosted cake and one 12 ounce bag each of red and blue candy melts.
The directions are simple as well:
Melt 2 cups (one 12-ounce bag) each red and blue candy melts in separate bowls in the microwave, in microwave-safe bowls. Microwave at 50-percent power in 30-second intervals, stirring, until smooth. (For a thinner mixture, melt with a little coconut oil.)
Pour each color onto separate parchment-lined baking sheets and spread evenly with a spatula.
Refrigerate until set, about 20 minutes.
Break the red and blue candy into small irregular pieces.
Arrange the candy on the vanilla-frosted cake, gently pressing the pieces into the frosting.
As always required by this Grandma, it is grandchildren friendly and easy for them to help you make (after you do the microwave) and decorate.
Yes, it is perfect for July Fourth 2021.
Celebrate with (hopefully lasting) post-pandemic.
