Peanut Butter S’Mores For Those Grandchildren Who Love Peanut Butter and Chocolate

Sitting in a doctor’s office, I always look at old magazines that might contain recipes my grandchildren might love. Of course, the recipes have to be fast and easy because if this Grandma ever cooks or bakes, it will be with grandchildren. Otherwise, this Grandma makes reservations.


Looking through an old Family Circle Magazine from August 2014, I found this great recipe for S’Mores. Oddly, it was in an August issue because S’Mores make me think of winter and fire. This recipe made me think of my youngest grandchild who is three years old. He has become a peanut butter freak. When he is hungry, the first thing he asks for is peanut butter on a spoon. I remember once reading that a teaspoon of peanut butter with a glass of water before a meal was a dieting technique as it decreased appetite. I wonder if it the glass of water that does it as this little one keeps eating and eating. He is our good eater.


This recipe is NOT a diet recipe. As a matter of fact, do not tell the parents of the grandchildren that the calorie count per serving is 677 calories! But it is fun, looks appetizing and, best of all, is easy to do. The recipe calls for eight servings.


Remember, we grandmas want easy. This Grandma has a huge garbage bag of old towels to cover the kitchen counters and floors before cooking or baking with grandchildren. This makes cleanup a snap. Those grandchildren who can read, read the recipe aloud, and measure and pour. The smallest grandchildren can crush, mix and scoop. Divide up the tasks by age and ability. Be sure to buy extra marshmallows as the grandchildren will otherwise snack on all you need for the recipe. Since this Grandma is a chocolate lover, I would also add miniature chocolate chips to sprinkle on top to the recipe–again buy much more than you need.


Peanut Butter S’Mores which I call Peanut Butter Chocolate S’Mores

Ingredients

9 graham cracker boards, finely

3 tablespoons melted butter

1 teaspoon salt

8 4.4 or 6.75 glass jars with removable lids

2 cups marshmallow creme

1 box (18 oz.) Ghirardelli double chocolate brownie mix

1 large egg

1/3 cup oil

1/4 cup water

4 tablespoon creamy peanut butter

2 2/3 cups miniature marshmallows

Miniature chocolate chips

Directions

  1. Preheat oven to 325 degrees.

  2. In a small bowl, stir together graham cracker crumbs, melted butter, sugar, and salt. Spoon 3 tablespoons crumb mixture into each jar. Press mixture with the back of a flat greased spoon to flatten into bottom.

  3. Spoon 1/4 cup of marshmallow creme into each jar and set jar aside. Press mixture with the back of a flat greased spoon to flatten into bottom.

  4. Prepare brownie mix as per package instructions, using egg, oil and 1/4 cup water. Divide batter among jars, using a heaping 1/4 cup per jar.

  5. Bake at 325 degrees for 30 minutes.   Marshmallow may puff up in the center of the jar.

  6. Heat the peanut butter in the microwave for 30 seconds. Spoon ½ teaspoon into each jar. Top with a little of the remaining graham cracker mixture and 1/3 cup miniature marshmallows.

  7. Increase oven heat to broil. Broil s’mores 4 inches from heat for 30 seconds to 1 minute, until lightly browned. Sprinkle mini chocolate chips on top. Cool slightly before serving.

I picture eating these with grandchildren when I visit up north sitting in front of a fire. . . .if I can convince the parents of the grandchildren to fuss with a real fire for us. A make believe fire works as well with these delicious peanut butter chocolate s’mores.
